Bread recipes come in all shapes and sizes. You can make quick breads like
muffins and mini loaves of bread when you are in a hurry or you can make a day
of it and bake yeast breads that require rising time.
There are bread recipes to go with just about any meal. We usually think of dinner rolls with…well…dinner and cinnamon rolls or muffins for breakfast. We think of sandwich bread for lunch.

Although there are many bread recipes for basic bread, there is one recipe that I turn to more than any other. You can use the recipe I am about to share with you for everything from bread loaves, to rolls to cinnamon or poppy seed rolls.
Of all my bread recipes, this one is my favorite. It is the one that all my friends requested after having dinner at our house.
What makes some bread recipes so outstanding isn't always the ingredients but it's the methods used in making the bread.
In this recipe, the secret is scalding the milk before adding it to your batter. There are eggs in the dough, too.
Many people bake using bread recipes that call for simply water. And you can make a great bread that way.
But the milk and the scalding of the milk, especially, makes bread that has a softer texture. The eggs and the milk together give it a richer flavor.
That is why this recipe is called "Rich Hot Rolls". Don't let the name discourage you from making loaves of bread with it, though. I make a pan of rolls, a pan of cinnamon rolls and with whatever is left over, I make into a nice round loaf of bread and bake it on a greased cookie sheet.
You get three varieties when you are done for one time in the kitchen when you do it this way.
There are bread recipes specifically for loaf pan breads but in a loaf pan is not the only way to bake bread. These round loaves look like what you see served at parties with the center torn into pieces with spinach dip or a cheese spread served on the side.
Bread Recipes To Make With Your Kids
Even the youngest child can help you make bread. Bread recipes that call for yeast are the most fun for little ones because handling it is just like playing with play dough. The fun part is you get to eat this kind when you're done playing.
So, while you are shaping rolls, your children can be stretching and shaping and rolling and doing whatever they want with their little portion of dough. If you tell them ahead of time that you can only bake dough that hasn't fallen on the floor, they will be more careful. It's really fun to eat something you've shaped yourself.

It's easy to get into a rut and make the same things all the time but you will find it is really fun to make something new sometimes. I remember the first time I made English muffins. I was so worried they wouldn't turn out.

Denise Lorraine's Rich Hot Rolls
- 1 1/2 c. milk Scald.
- 1 c. shortening
- 1 c. sugar Add.
- 2 t. salt
- Cool to lukewarm.
- 1 c. warm water Sprinkle yeast on warm water. Set aside.
- 4 pkgs. yeast
- 3 c. flour Add to milk/shortening mixture.
- Beat.
- 4 eggs Beat into above.
- Yeast mixture
- 5 1/2-6 3/4 c. flour
Gradually add remaining flour to above. Just till not sticky.
Knead dough on floured board. Shape into a smooth ball. Grease bowl and dough with shortening. Place dough in large bowl and let rise in a warm draft-free place. Punch dough down. Form into dinner rolls.
Place on greased cookie sheet to rise again. Let dough almost double in size again. Bake rolls for 12-15 minutes at 375 degrees until lightly browned. Remove from oven and brush with butter. Remove from pan to cool.
Tips For Rising Bread
A draft can inhibit rising and can reduce already risen dough height. Set bowl in warm (but not hot) place. Try not to open outside doors on cold days.
If a door must be opened during the rising of your bread, you will be glad you have covered the dough somehow...even if it's just with a large tea towel.
A good idea is to plan ahead to bake a casserole, roast or cookies while the bread is rising so that the stove top and room are nice and warm when rising your bread or rolls.
